I know I haven't been the best blogger this summer... but I am committing now to do better!
I just wanted to share one of our newest favorite summer dinners. I promise it is sooo easy and equally delicious (which is a necessity when I am cooking...).

The great thing about this recipe is that it basically uses staples that you probably have on hand:
tomatoes
fresh mozzarella
fresh spinach*
whole wheat english muffins
 & eggs
 
While your english muffin is toasting, fry up your egg with whatever seasonings you like (salt, pepper, italian seasoning, garlic salt, onion powder, you get the picture). Slice your mozzarella and place on warm english muffin then layer the egg, tomato, and spinach.
 *momma face suggested replacing spinach with fresh basil. So you could also try that.
love the letters on our fridge? haha.

You could eat this for breakfast, lunch, or dinner.
Seriously, best meal ever.
